We are a boutique cheese producer in Brisbane, Queensland. Our mozzarella is fermented and stretched in the traditional Italian way. Experience our authentic local artisan cheese.

 
BURRATA

Casa Motta's Burrata is a thin pouch of mozzarella filled with "stracciatella" and cow pure cream.

Stracciatella

Stracciatella is the shredded cow's mozzarella and pure cream used in Burrata, but it can also be sold on its own. It makes a delightful creamy addition to any pizza. 

BUFFALO MOZZARELLA

Made from Queensland buffalo milk, Casa Motta's Buffalo Mozzarella is moist, with a mild yet slightly sour taste.

ricotta

Casa Motta's ricotta is creamy, full of protein and wonderful spread simply on toast, or even better in cannelloni, hand-made gnocchi or your favourite cake. Our ricotta is heavenly because we use buffalo whey in the process, making the ricotta creamy and tasty. 

 
FIOR DI LATTE

Made from Queensland cow milk, Casa Motta's Fior di Latte is creamy and soft. We also offer the pizzaiolo's (pizza master) favourite: the pizza log. 

bocconcini

Our bocconcini are just like the fior di latte above, but only 30g in size and are served in small tubs so you get more than just one taste of heaven! They're perfect in salad or skewered alongside cherry tomatoes.

How to make Mozzarella Class

 

The 1 hour class covers the basics of cheesemaking as well as how to make mozzrella very own mozzarella, you get to take home with you at the end of the class. The class is held with Alessandro, the owner and master cheesemaker twice per month Monday night 6pm-7pm.
